Tiramisu
Ingredients
- 250g mascarpone
- 100g sugar
- 3 medium-sized eggs
- 1 cup of espresso (you can also just use instant coffee)
- 20 ladyfinger biscuits
- cocoa powder
Directions
- In a bowl, mix the egg yolks with the sugar until you obtain a moussy texture
- Add the mascarpone and mix at a lower speed for no more than 2 minutes
- In a separate bowl, beat the egg whites until they are firm and moussy
- Delicately incoporate the egg whites to the yolk/sugar/mascarpone mixture
- Dip your lady fingers in coffee for no more than 1 second and put them at the bottom of a rectangular Pyrex tray
- Add a layer of the egg/sugar/mascarpone mixture
- Add a second layer of coffee-dipped ladyfingers
- Add another layer of the egg/sugar/mascarpone mixture
- Refrigirate for 6 hours minimum covered
- Sprinkle sifted cocoa over the tiramisu before serving it and enjoy it bella!
