Pierre Hermé’s Almond Chocolate Cake
Ingredients
For the Cake
- 150g sugar
- 150g butter
- 200g dark chocolate (range:47%-63%)
- 4 eggs
- 2 tablespoons flour
- 120g of almond powder
Directions
Cake:
- Preheat oven to 190°C (374F).
- In a bowl, mix the egg yolk with sugar until the mix becomes white and moussy
- Mix the egg whites separately with a pinch of salt until the texture hardens
- Melt the chocolate with the butter in a double boiler pan
- Add the chocolate mixture to the yolk and sugar mixture and mix well
- Add the almond powder and the sifted flour to the mixture
- Add the eggs whites (one third at a time) and incorporate delicately with a silicon spatula
- Bake for 25 minutes (can vary depending on the oven)
- Decorate with sifted icing sugar and raspberries!
