Tomatoe Goat Cheese tart
Ingredients
- 1 shortbread crust
- 4 medium Spanish tomatoes on the vine sliced
- 100g delicate Goat’s Cheese
- 70g grated emmental
- 50g mozzarella
- 2 tablespoons of Dijon mustard
- 2 tablespoons of olive oil
- 1 teaspoon pink peppercorn
- basil (optional)
Directions
- Unroll your crust on a circular tart dish, poke some holes with a fork and pre-cook for 10 minutes at 180C (350F)
- Remove crust from oven, and spread with the Dijon mustard
- Add grated emmental and the mozarella on top of the mustard
- Add the sliced tomatoes over the cheese
- Add the sliced goat’s cheese over the tomatoes, sprinkle with olive oil
- Crush the pink peppercorn with your hands over the tomatoes
- Bake in oven for 20 minutes at 180C (350F)
