Tomatoe Goat Cheese tart

Ingredients

  • 1 shortbread crust
  • 4 medium Spanish tomatoes on the vine sliced
  • 100g delicate Goat’s Cheese  
  • 70g grated emmental
  • 50g mozzarella
  • 2 tablespoons of Dijon mustard
  • 2 tablespoons of olive oil
  • 1 teaspoon pink peppercorn
  • basil (optional)

Directions

  1. Unroll your crust on a circular tart dish, poke some holes with a fork and pre-cook for 10 minutes at 180C (350F)
  2. Remove crust from oven, and spread with the Dijon mustard
  3. Add grated emmental and the mozarella on top of the mustard
  4. Add the sliced tomatoes over the cheese
  5. Add the sliced goat’s cheese over the tomatoes, sprinkle with olive oil
  6. Crush the pink peppercorn with your hands over the tomatoes
  7. Bake in oven for 20 minutes at 180C (350F)
