Saag Paneer my Way

Ingredients  

  • 250g paneer
  • 500g of baby spinach leaves
  • 400mL coconut milk
  • 1 table spoon lemon juice
  • 1 teaspoon of grated garlic
  • 2 tablespoons of olive oil
  • 1 box of Tandoori Masala from Shaan Masala
  • 10 cloves

Directions

  1. In a bowl, combine 1 table spoon of olive oil, half of the Tandoori spice packet, the lemon juice, and the paneer cut in cubes
  2. Heat olive oil in a pot, and sauté the garlic paste
  3. Add the marinated paneer and the cloves to the pot and cook on high heat until the paneer becomes golden
  4. Add the spinach leaves and cook for 5 minutes on high heat
  5. Add the coconut milk and 10cL of boiled water
  6. Cook for 20 minutes or until water has reduced to half its volume
  7. Ready to eat with chapati or rice!
