Potato and chicken croquettes
Ingredients
- 4 medium-sized potatoes
- 100g of shredded chicken
- 50g butter
- 1 egg
- panko
- flour (enough to coat your croquettes)
- olive oil
- salt and pepper
Directions
- Boil your potatoes skin-on until it is cooked all the way through
- Mash the potatoes, add the butter, teh chicken, and half of the beaten egg
- Add the spices you want to the mixture: salt, pepper, garlic powder, paprika…
- Form firm balls between your two hands, and refrigerate place potatoes in the freezer for 20mn
- Coat the potatoes with flour, roll in the remaining egg, coat with panko
- You can deep fry or bake your croquettes in the oven at 160°C (320F)until golden brown
