Potato and chicken croquettes

Ingredients  

  • 4 medium-sized potatoes
  • 100g of shredded chicken
  • 50g butter
  • 1 egg
  • panko
  • flour (enough to coat your croquettes)
  • olive oil
  • salt and pepper

Directions

  1. Boil your potatoes skin-on until it is cooked all the way through
  2. Mash the potatoes, add the butter, teh chicken, and half of the beaten egg
  3. Add the spices you want to the mixture: salt, pepper, garlic powder, paprika…
  4. Form firm balls between your two hands, and refrigerate place potatoes in the freezer for 20mn
  5. Coat the potatoes with flour, roll in the remaining egg, coat with panko
  6. You can deep fry or bake your croquettes in the oven at 160°C (320F)until golden brown
  7. Share and eat with your friends!
