Giant Couscous Salad
Ingredients
- 250g giant couscous
- 150g shredded chicken
- 1 carrotÂ
- 1 cucumber
- 1 lemon
- 1 bouquet of mint
- 200g feta cheese
- 1 teaspoon of sumac
- 1 table spoon of olive oil
- salt and pepper
Directions
- In a pan, cook your giant couscous and let is cool down in a bowl
- Chop your cucumber into small squares and grate the carrot, add to bowl
- Add the shredded chicken to the bowl
- Zest the lemon on top of the bowl, and then squeeze the lemon into it
- Crumble the feta cheese over the bowl
- Add the sumac, olive oil, salt, pepper, and eat away!
